APRS digipeater path settings confusing me, anyone help?

so ive been running APRS for a few months now, mostly just vehicle tracking with a Mobilinkd TNC hooked to my FT-65 and an old android phone running APRSdroid. works okay but i keep reading about path settings and honestly im more confused now than before i started reading about it.
right now im just running WIDE1-1,WIDE2-1 which is what someone at the club told me to set and it seems to get me into the network but i see some guys running just WIDE2-1 and others running WIDE1-1 only and i dont really understand when you'd use one vs the other. is WIDE1-1 just for hitting fill-in digis or what? and does it actually matter that much if youre in a decent coverage area?
also side question -- is there a good way to see if your packets are actually getting digipeated correctly or am i just supposed to trust aprs.fi and hope for the best
