when do you actually need to use phonetics vs just saying the letter

ok so ive been licensed about 8 months now and i still get confused about when youre supposed to use the NATO phonetic alphabet versus just saying the letter normally. like if someone asks me to confirm my callsign do i always spell it out phonetically or only sometimes? i feel like i hear people on repeaters just say their callsign normally and then other times people go full Alpha Bravo Charlie on everything and i cant figure out if theres a rule or if its just preference
also is it weird if i use phonetics wrong, like if i accidentally say something thats not the standard word? i said Foxtrot correctly the other day and felt kind of proud of myself but then stumbled on November and just said N so idk. nobody said anything but still.
