confused about where exactly i can operate on 40m as a general

ok so i passed my general a few weeks ago and im still trying to figure out the frequency thing. i know there are portions of each band i can use but i keep seeing different things online about where to actually operate. like on 40 meters i see people talking about 7.125 and then i also see stuff about staying away from 7.200 area and band edges and honestly its all a bit confusing to me.
my question is basically — is the band plan the same as what the FCC says i can use, or is it like a separate thing that hams just agree on? and what does band edge even mean, why do people make such a big deal about it. i dont want to accidentally transmit somewhere i shouldnt be
