confused about where exactly i can operate on 40m as a general

ok so i passed my general a few months ago and ive been mostly sticking to the digital modes but i want to try some SSB phone on 40 meters and im honestly just confused about the whole thing. like i know theres a band plan but is that different from what the FCC actually says i can use? my buddy told me generals cant go below 7.175 or something but then i looked it up and saw different numbers in different places and now im more confused than before.
also i keep hearing people say dont operate near the band edge but nobody really explains why or how close is too close. like whats actually going to happen if im at 7.299 or whatever the edge is. is it a legal thing or just a courtesy thing or what
